Role Purpose: To manage the galley, prepare nutritious and safe meals for the crew, ensure the cleanliness and safety of the galley, and maintain crew morale and well-being. 

Key Responsibilities

Plan and prepare meals for the entire crew, considering nutritional needs, dietary restrictions, and preferences. Ensure that food is cooked, baked, or grilled safely and with proper hygiene. Maintain oversight of the food budget, striving to minimize waste and control costs, and report food inventory and budget status to the ship Master. Ensure waste management through the proper disposal and separation of galley waste as per maritime regulations.

Skills, Knowledge and Expertise

Essential Knowledge: The Chief Cook must be familiar with company policies and procedures, culinary techniques, food safety and hygiene standards, and the operation and maintenance of specialized kitchen equipment. Key knowledge areas include inventory control of supplies, cultural and dietary preferences of multinational crew members, and waste management practices. Understanding food budgets and making cost-effective choices while ensuring quality is essential. 

Essential Skills and Abilities: Effective leadership and communication skills are crucial for the Chief Cook, along with the ability to manage time effectively, prioritize tasks, and complete responsibilities on schedule. Proficiency in planning and preparing diverse and balanced menus that meet the nutritional needs and dietary restrictions of the crew is required. Additionally, the Chief Cook must effectively manage inventory and ordering of food and supplies, utilizing procurement management systems, and safely operate galley equipment. 

Experience: Demonstrates leadership behaviors and keeps the galley and provision storage areas clean and well-maintained. Shows adaptability by improvising when faced with unexpected challenges or shortages. Consistently serves well-prepared, attractive, and tasty food on time, catering to a multinational crew, while making cost-effective food choices without compromising on quality.
