Duties and Responsibilities

In this role, I will assume full responsibility for the efficient operation of the Breakfast (Restaurant) service to provide exceptional products and services within Six Senses brand operating standards and budget.

I will work strategically with the EAM F&B Director and Assistant F&B Director to develop cohesive and productive goals for the department and establish procedures to achieve them. I will support overall consistency of Six Senses vision, quality standards and develop concepts aligned with brand identity. 

My scope of work includes:

  • Keep abreast of industry trends and best practices in breakfast and wellness cuisine, continuously improving the product and service offering.

  • Focus on elevating and rejuvenating the breakfast experience in line with Six Senses wellness philosophy.

  • Ensure products and services are constantly assessed and reviewed to remain relevant, innovative and aligned with sustainability practices.

  • Maintain a strong physical presence during breakfast service to ensure rigorous adherence to LQA standards.

  • Be responsible for delivering an exceptional guest breakfast experience.

  • Effectively handle service recovery or guide hosts to do so in case of guest feedback or complaints.

  • Inspect the breakfast buffet, à la carte service, setup, presentation and guest areas regularly, ensuring maintenance and product improvements are actioned promptly.

  • Lead, motivate and develop a team of engaged hosts to provide exceptional service standards.

  • Ensure menus, displays and beverage offerings remain relevant and aligned with wellness and sustainability values.

  • Maintain full knowledge of breakfast menus, specials, dietary options and beverage selections.

  • Be responsible for monthly inventory related to breakfast operations.

  • Maintain thorough knowledge of all property facilities and services.

  • Support updating guest history profiles to personalize the breakfast experience.

  • Ensure effective communication between departments (Kitchen, Stewarding, Front Office, etc.) to guarantee smooth operations.

  • Supervise storage areas to ensure stock is properly handled and complies with hygiene and control standards.

  • Guide portion control and presentation standards to ensure consistency and quality.

  • Ensure the breakfast operational budget is strictly adhered to, monitoring and controlling costs while maintaining required standards.

  • Optimize payroll costs through efficient scheduling and productivity management.

  • Prepare and submit required documentation and complete all corporate reporting accurately.

  • Attend and conduct meetings and daily briefings as required.

Skills and Experience

To execute the position of Breakfast Manager, I must have the required qualifications, technical skills and experience in a similar role in luxury hotels with proven results and includes the following:

  • At least 5 years of experience in Breakfast operations, Restaurant or similar F&B outlet within a luxury hotel environment, including supervisory exposure.

  • Demonstrated experience in frontline Food & Beverage operations with a strong understanding of luxury breakfast service standards and guest expectations.

  • Personally involved and highly visible during morning operations, with excellent organizational and leadership skills, capable of providing clear direction and ensuring smooth and efficient breakfast service.

  • Strong understanding of product quality, buffet presentation, à la carte service and guest personalization, with a passion for excellence and attention to detail aligned with LQA and Forbes standards.

  • Solid knowledge of wellness-oriented cuisine, dietary preferences and sustainable practices in line with Six Senses philosophy.

  • Fluent in English, both written and spoken; additional languages are highly preferred.

  • Technical skills include advanced MS Office (Word, Excel, PowerPoint and Outlook), Opera PMS, CRM systems and Micros POS platforms.

  • Knowledge of resort policies regarding reservations, breakfast procedures, discounts, food promotions and detailed F&B booking processes.

  • Valid EU work permit.
