Job Overview
A Mozzarella Maker is responsible for making fresh Mozzarella according to Eataly’s authentic Italian recipe. Reports to the Fresh Market Manager.
- Utilizes fresh mozzarella curd to heat, stretch by hand, and make housemade mozzarella and other pasta filata offerings fresh daily, according to Eataly recipes
- Engages all senses: tastes, smells, feels, listens and observes all characteristics of each batch to maintain and elevate quality
- Records daily the weight of ingredients used, batch sizes, and amounts transferred to other outlets
- Makes variations in time cycles and ingredients used as necessary for succeeding batches
- Cares for and handles products with careful attention to quality control and waste management
- Weighs, packages and labels mozzarella lab offerings
- Stocks display refrigerators neatly, accurately and in a timely manner
- Provides guest service and information on mozzarella-making process to guests
- Cleans work station thoroughly following food safety best practices
- Ensures collateral supplies are in stock and being utilized properly in the lab
- Performs other duties as required or assigned
